One of the hardest things I found when I started wanting to eliminate, or at least reduce, the amount of eggs we were eating, was finding a muffin recipe that worked well without them! I mean not just barely passed the taste test. I mean moist and delicious AND stays together without crumbling apart before I can take a bite.
And these dairy-free, egg-free spelt flour muffins actually work and taste so good that they pass the “finiky-husband” test!
